The Ultimate Phoenix Dancong Experience: The Gongfu Ceremony
The Gongfu method is the key to unlocking the evolving aromas of Phoenix Dancong. It uses multiple, rapid, short infusions, allowing you to appreciate the subtle changes in the liquor with each brew.
Brewing Steps:

Warm the Teaware: Pour boiling water into your empty gaiwan (or small teapot) and cups, then discard the water. This heats the vessels.

Add Leaves: Place about 5-7 grams of tea leaves (about one heaping tablespoon, filling ~1/3 of the pot) into the warmed gaiwan.

Rinse (Awaken the Leaves): Pour boiling water (95-100°C / 200-212°F) over the leaves and immediately pour it out. Now, smell the incredible initial aroma rising from the wet leaves inside the gaiwan!

First Infusion: Pour boiling water over the leaves again. Let it steep for just 3-8 seconds, then immediately pour all of the tea into a pitcher or your cups. Make sure to drain every last drop.

Enjoy & Repeat: Savor this first infusion. You can re-brew the same leaves 8-10 times or more. Just add 5-10 seconds to the steep time for each subsequent brew. You'll be amazed by the tea's journey from floral to fruity to honeyed notes.
