Mythical Origin

Legend has it that when Zhao Bing, the last emperor of the Southern Song Dynasty, was fleeing to Fenghuang Mountain in Chaozhou, he was thirsty and exhausted. A phoenix, the divine bird, brought him a tea branch in its beak. After drinking the tea, the emperor felt greatly refreshed. Later generations thus named this tea "Bird's Beak Tea," which is considered the earliest mythical origin of Fenghuang Dancong.

The earliest reliable written records date back to the Song Dynasty. The Chaozhou Prefecture Gazetteer from the Northern Song records: "The famous tea from Fenghuang Mountain is called 'Tribute Tea' (Daizhao Tea)." Folklore holds that local people on Fenghuang Mountain were already cultivating and processing tea at that time.

Discovery and Utilization in the Tang Dynasty

In the Tang Dynasty, wild tea trees already grew in the Phoenix Mountains. According to the "Chaozhou Prefecture Chronicle", the local She people were the first to discover and utilize these wild tea trees. Initially, they only chewed fresh leaves directly, and later gradually explored simple processing methods such as sun-drying and roasting.
